Housed inside the adobe inspired walls of Hotel Willa and surrounded by works from local Taos artists, juliette is a celebration of the abundance of Northern New Mexico. Centered around simple, honest food and drink, the restaurant focuses on ingredients grown and raised nearby, bringing locals and travelers together around seasonal meals shaped by the land, the spirit of Taos, and the warmth of gathering — designed to feel like being in a loved one’s home.

Working closely with nearby farms and growers including La Villita Farm and Don Bustos of Santa Cruz, juliette’s menu follows the seasonal rhythms of Northern New Mexico. Corn, chiles, orchard fruit, herbs, and produce from the on site garden shape a cuisine rooted less in tradition and more in the ingredients available at any given time.

Like being at a friend’s home, juliette moves throughout Hotel Willa from morning to evening. Days begin in the lounge with coffee, pastries, and breakfast, followed by poolside bites and slow afternoons beneath the high desert sun. As evening settles in, dinner shifts into the dining room and patio, creating a space designed to feel like your backyard in Taos.
